Jamie I took great intrest in your school meals campaign and at the time thought it was a good idea, I have a son in high school and was concerned about what he was eating. I took a job as a dinner lady, and was very amazed how much fresh food was prepaired, but still a lot of ready packed crap.
the kids go mad for biscuits and cakes, the problem is the school dinners are too costly, why spend £2.00 on a meal when you can buy two cakes and about three biscuits, to munch on them all day, who needs a meal. in other words children are still eating crap, but cheeper crap. as the school kitchen cooks chips every two weeks the whole school turnes out for that, all the other food paster ect is binned.also the amount of food that is binned each day is terrible it could be sold of cheep,or taken to elderly people who can not afford good food.

Hello Jamie
I am lactose intolerant and do not eat any diary products, I love to try different recepies however most recepies use cream, creme fraiche, cheese etc, do you have any great recepies which use non dairy alternatives? Removing dairy products from certain recepies do not achieve the same results and I dont know of any non-dairy alternatives to cheese, cream etc, can you help?
Regards, Patricia

Dear Jamie,
For the last few years my parents and I have been trying to make sponge cakes in our fan oven; however unfortunately despite our best efforts (using either just self raising flour or plain flour and baking powder) we cannot get them to rise. Do you have any solutions?
Many thanks

Hi Jamie,
A while back you advertised a recipe for seas bass fillets with creamed spinach which included nutmeg, double cream and parmesan and it was with garlic roasted chips but i have mislaid the recipe and forgot how to make it. i intend to make it this Friday.

Hi Jamie,
About 2 years ago you had a recipe where you have to squeeze the sausage meet out of a sausage and made a tomato and cheese bake with it. I know there was some parmesan and rosemary but i can't remember any of the other ingredients. i haven't made it for a while but know i loved it.
Do you remember and if so can i have a copy of it sent to me? It was long before this new fab mag so it might be quite difficult to get hold of.
Cheers
Jules

How do you make synthetic cream? I've tried loads of different ways which I've found on the net but none of them taste anything like the cream you get from a bakery!
Do you know how?

Hello Jamie,
I have started making my own Green Thai Curry from scratch. It turned out to be quite good for the first attempt. I added coconut milk and some carrots into the curry too to sweeten the taste a little. I usually add chicken breasts and fresh prawns.
What other ingredients would you recomment that would give more variety and to be a bit healthier at the same time?
Thanks Jamie!
Best regards,
Kerry
